About the location:
Four Seasons Resort Mallorca at Formentor, perched on the spectacular Formentor Peninsula and surrounded by panoramic views of the Mediterranean and the stunning landscape, first opened its doors in August 2024 following an extensive restoration and renovation of the historic property, originally inaugurated in 1929 on a vast private estate. After its successful debut, the resort will reopen to guests in March 2025, reaffirming its status as a unique destination of luxury and elegance on the island.
About the role
The Pastry Chef de Partie is responsible for overseeing a specific section within the pastry kitchen, ensuring the preparation, presentation, and quality of all pastry and dessert items meet the highest standards. This role involves leading a small team, managing daily mise en place, and contributing creatively to menu development. The ideal candidate is technically skilled, organized, and passionate about pastry arts.
What you will do
The Pastry Chef de Partie partners with the Executive Pastry Chef to manage the operation of the shop.
The Pastry CDP is responsible for the daily production of required items following the standards set by the Executive Pastry Chef.
Prepare pastry items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards.
Train, motivate, supervise and discipline all staff.
Communicate regularly with the Executive Pastry Chef regarding problems, irregularities and concerns, while providing a recommended course of action.
Complete mis en place and set-up station for breakfast, lunch, and/or dinner service.
Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.
Operate and maintain clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
Label food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures.
Check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages.
Return all food items not used to designated storage areas, being sure to cover/date all perishables.
Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
Work harmoniously and professionally with co-workers and supervisors and actively participate in creating a teamwork environment.
Perform other duties as assigned.
What you bring
Minimum 5 years previous pastry experience.
Must be willing to work a flexible schedule in order to accomplish all major responsibilities. This includes weekends and holidays.
Applicants are highly recommended to have previous experience in a luxury Resort setting.
Must be able to stand and walk for the duration of an 8 hour shift.
Attention to Detail: Observant and proactive in maintaining cleanliness, precision, and consistency in all pastry preparations, ensuring high-quality presentation and guest satisfaction.
Teamwork and Positive Attitude: Collaborative and supportive within the kitchen team, maintaining a respectful, enthusiastic, and solution-oriented approach under pressure.
