POSITION SPECIFICS
Penn State Extension and the Department of Animal Science is seeking a highly motivated and organized Extension Program Specialist in Meat Science to provide support with meat science extension activities. This position will be responsible for coordinating training activities for the PSU Butcher School, a certified apprenticeship in PA. They will also be expected to provide educational resources, programs, and assistance for a wide variety of clientele in meat & poultry processing and food safety. This work will require engagement with stakeholders, meat processing associations, undergraduate students, and high school vocational programming related to meat processing. This position will work with the Livestock and Food Safety Extension teams for program planning and in-service training.
The successful candidate will be responsible for:
Coordinating, recruiting, and administering activities associated with the PSU Butcher School including but not limited to interviewing and enrolling program participants, managing supply inventory, work with program employers to manage apprentices, and managing state and federal data reporting associated with the program.
Supervising Butcher School apprentices during the on-campus component of the apprenticeship program by leading activities including but not limited to hands on meat processing in the Meats Laboratory, leading industry tours, and assisting with training lectures.
Developing and implementing new meat science extension programing in the areas of carcass processing, meat business management, meat processing for hobbyists/chefs, or other areas of meat science as need arise. Develop or update publications, fact sheets, websites and presentations.
Assisting with other livestock, meat science, and food safety Extension activities hosted by Penn State
Assisting with university teaching activities that take place at the Meats Laboratory.
Maintaining up-to-date knowledge and competencies through regular training, certifications, and professional development.
MINIMUM EDUCATION, WORK EXPERIENCE & REQUIRED CERTIFICATIONS
If filled as Extension Program Specialist - Intermediate Professional, this position requires: Bachelor's Degree 1+ years of relevant experience; or an equivalent combination of education and experience accepted Required Certifications: None If filled as Extension Program Specialist - Advanced Professional, this position requires: Master's Degree 3+ years of relevant experience; or an equivalent combination of education and experience accepted Required Certifications: None
Qualifications:
Required:
A bachelor’s degree or higher in Meat Science, Animal Science, Food Science or other related field of study.
Ability to demonstrate positive human relations and effective communication skills necessary to work effectively with colleagues, industry representatives, government officials, and the general public.
Preferred:
Experience with fresh meat processing activities (ie slaughter, carcass fabrication, retail cut preparation) is strongly preferred.
A working knowledge of HACCP systems and ServSafe is preferred.
Various computer skills, including but not limited to, word processing, spreadsheet and data manipulation and presentation software is strongly preferred.
Experience working with diverse audiences is desirable.

SALARY & BENEFITS
The salary range for this position, including all possible grades, is $46,400.00 - $74,000.00.
